The art of the slow steep

Why patience is the most underrated ingredient in a great cup, and how a few extra seconds can transform an ordinary brew.

Brewing tea well is less about expensive equipment and more about attention. The leaf, the water and the clock are the only three variables that truly matter, and learning to read them turns a routine drink into a small daily ritual.

Start with water just off the boil for delicate greens and whites — around 80°C — and let bolder blacks and oolongs take the full rolling boil. The temperature shapes which compounds you coax from the leaf, balancing sweetness against tannic grip.

Above all, taste as you go. A cup left thirty seconds longer than yesterday tells you more about your preference than any printed guide ever could.
